What happens when a physicist decides to become a chef? If they're anything like Manuel Linares, then you can expect a fusion of food and science to come out of their kitchen. For instance, one of the Spaniard's masterpieces is an ice cream that changes colors when you lick it.

The ice cream is called Xamaleón and is made from all natural ingredients

The formula is a patent-pending secret but he claims it's "entirely made with natural ingredients." He calls it Xamaleón.

Here’s the kicker: this confectionery concoction is all natural (and not in the radioactive isotope way), and it doesn’t involved any cows that have been modified with chameleon DNA despite the fact that creator Manuel Linares did choose to call his mystical color-changing ice cream Xamaleón.

But the 37-year-old Spaniard studied physics and engineering at university before deciding to become a cook, and has created the new ice cream, called "Xamaleon", meaning "chameleon".

The ice cream he created, which he says tastes like tutti-frutti, includes strawberries, cocoa, almonds, banana, pistachio, vanilla and caramel, and is so popular that business at his ice cream parlour in the town of Calella de Mar, in the east Spanish province of Barcelona, is booming.

Linares, a 37-year-old physicist with an obvious affinity for cutting-edge cuisine, is understandably protective of his secret recipe. While he won’t disclose exactly what it is that makes the ice cream change color, he did tell Diai de Girona (translated) that the magic isn’t all in the ice cream itself. A special concoction he refers to as “love elixir” gets spritzed on the ice cream after it’s scooped and it helps accelerate the reaction.

Linares is currently working on other recipes such as ice-cream that reacts to ultra violet light in clubs

He's now working on another two weird ice creams that reacts to the ultraviolet lights in clubs and another one that turns from completely white to pink on its own.

As unusual as it sounds, this is just the beginning of Linares' foray into the color-changing ice cream business: he also plans to whip up ice cream that turns from white to pink, and another one that glows under ultraviolet light.
